Sunflower Wedding Cookies

We love eating wedding cookies, yes they are messy but are oh so good! When my husband got diagnosed with Crohn’s disease he could not have these little cookies anymore because they had pecans in them. So, I set out to make some for him without having any kind of nuts in them, instead I used sunflower kernels.

The cookies turned out great and I really think I just might have found an alternative to using nuts in my recipes! I wasn’t sure at first about using sunflower kernels, but now I can’t wait to try some other recipes using them! My husband was very excited to be able to eat the wedding cookies again and I’m happy to get to bring you guys another Crohn’s friendly recipe!

Sunflower Wedding Cookies

Ingredients:

1 cup of Sugar

1 1/2 sticks of Butter

1 tsp of Vanilla Extract

1 Egg

1 tsp of Baking Soda

1/4 cup of Powdered Sugar

2 cups of Flour

3/4 cup of Sunflower Kernels

4 Tbsp of Powdered Sugar (to dust the cookies with)

Instructions:

First you want to grind your sunflower kernels in a food processor. Next you want to mix together your sugar, butter, vanilla extract, egg and baking soda. Once mixed together you want to slowly add in your 1/4 cup of powdered sugar and sunflower kernels. Then slowly add in your flour. Preheat your oven to 350˚. Once your dough is ready you will start to form 1 – 1 1/2 inch cookie dough balls. Place the cookie dough balls on a greased baking sheet about 2 inches apart. Then place them in the oven for about 8-10 minutes. Repeat the process until all the cookies have been cooked. Next you want your cookies to be completely cool and then dust them with powdered sugar.
