Seafood Enchiladas

There is something you should know about me I love seafood, but I recently found out I was allergic to shrimp. I’m thankful that I’m only allergic to shrimp and not all seafood. One of my favorite dishes is seafood enchiladas and it is very hard to find a restaurant that serves them without shrimp. This was a mission for me now, to make seafood enchiladas without shrimp and I did it! Since I have been craving these yummy seafood enchiladas for awhile now, you could only imagine how excited I was to be able to have my favorite dish again! For all of you who are not allergic to shrimp, you can easily substitute the crawfish and scallops with shrimp and if you do be sure to enjoy the shrimp for me!

Seafood Enchiladas

Amazing seafood enchiladas that are easy to make!

INGREDIENTS:

4 Tbsp of Butter

1 Jalapeno Pepper (chopped)

1 Clove of Garlic (minced)

1/2 lb of Scallops

1 lb of Crawfish (peeled)

1/2 cup of Wine

3/4 cup of Milk

1/4 cup of Flour

1/2 cup of Sour Cream

2 cups of Monterey Jack Cheese

16 Corn Tortillas

INSTRUCTIONS:

Add 2 Tbsp of butter to a skillet and heat over medium heat. After the butter is melted you want to add in your jalapeno pepper, garlic and saute for about 1-2 minutes. Then add in your scallops and crawfish, you want to cook them for about 7 minutes until done. Turn the heat off and set aside. Now to make your sauce, you will add in 2 Tbsp of butter to a sauce pan and melt it over medium heat. Next add in your flour and mix together thoroughly. Then add in your milk, wine, sour cream and 1 cup of cheese. You will cook this sauce for about 2-3 minutes to thicken, then add in your seafood to the sauce. Preheat your oven to 400˚. Now you are ready to start preparing your enchiladas. Take a few tortillas and microwave them for 15 seconds to make them soft. Then take one tortilla, add about 2 Tbsp of your seafood sauce to the middle of it and then roll it up. Place the rolled up tortilla with the folded piece facing down in your baking dish. You want to continue to do this until all of your tortillas are done. Then place the remaining sauce on top of the rolled up tortillas and top them off with 1 cup of cheese. Place in your oven for 20 minutes, get them out and….Enjoy!! : )
