I have to say that it is completely hot outside and what do you think of when it is hot? Well, for me it is all about cooling down as fast as possible! Well, lucky for you I have teamed up with some fabulous bloggers to bring you some amazing frozen recipes for the month of August! I really hope you enjoy all the frozen recipes that I created and will be posting in the next few weeks! My first one is Pineapple Coconut Popsicles! They are yummy, delicious and good for you! Also, this is a Crohn’s friendly recipe so my husband can enjoy it too!

Pineapple Coconut Popsicles
Ingredients:
2 cups of Fresh Pineapple
16 ounces of Lakewood Organic Coconut Juice Blend
Approximately 1/4 cup water to help thin the recipe
Directions:
Add your pineapple and coconut juice to the blender and blend it well. Slowly add water until you get a smooth blend. After you have your mixture pour it into your popsicle molds, but be sure to leave about 1/2 inch at the top for the mixture to expand. Place in your freezer and freeze 4-6 hours. Once frozen, take the popsicle molds out of the freezer and run the mold under hot water for a few seconds to free your popsicle!
