One of my favorite desserts at Pappadeaux Seafood Kitchen was the Banana Crepes. Unfortunately, about a year ago they took them off of their menu. I’m so excited to share this recipe with you guys, because I just recreated my favorite dessert! Oh how I have missed having it when going to Pappadeaux but no longer, I can have it anytime I want now! I hope you enjoy this recreation of Pappadeaux Banana Crepe!
Pappadeaux Banana Crepe
Ingredients:
1 pint of Haagen Dazs Vanilla Ice Cream
2 Bananas
Reddi-Wip
Hershey’s Syrup
For Crepes:
3 Eggs
2 Tbsp of Butter (melted)
1 tsp of Vanilla Extract
3 Tbsp of Sugar
1 cup of Milk
2/3 cups of Flour
For Bourbon Sauce:
2 Tbsp of Bourbon
1 cup of Heavy Whipping Cream
1/4 cup of Butter
1/4 cup of Brown Sugar
1/4 cup of Sugar
1 tsp of Vanilla Extract
Instructions:
You want to make your crepes first. In a mixing bowl add in your eggs, melted butter, vanilla extract, sugar and milk. Mix all of those ingredients well. Then add in your flour and mix together. After the mixture is ready, you want to get your griddle ready with medium heat. Once it is heated up, scoop out a portion of your crepe mixture and pour onto the griddle. You want to make sure when pouring the mixture it is thin and about 6-8 inches in diameter. Cook the crepe on one side for about 3-4 minutes and then flip it to the next side and cook for about 2 minutes. Repeat this process, until all of your crepe mixture is gone.
Now to prepare your bourbon sauce. In a medium saucepan, on medium heat melt your butter. Once the butter has melted you want to add in your brown sugar, regular sugar and vanilla extract. Next add in your heavy whipping cream. Keep stirring the mixture and then add in your bourbon. You want to reduce your heat to low and cook for about 3 minutes. Turn the heat off and add in your banana slices.
The final step is to prepare your crepe! Lay your crepe out on a plate and place one scoop of Haggen Daz ice cream in the middle of it. Fold up the sides of the crepe to cover the scoop of ice cream. Now add 1 scoop of ice cream at the very end of the crepe. You want to drizzle your bourbon sauce over the top of the the crepe, drizzle the chocolate syrup over it and put Reddi-wip on it if you want. Sit back and….
