Lemon Cheesecake Bars

Since I have made quite a few Key Lime recipes, I thought it would be fun to change it up a little. These lemon cheesecake bars were a hit in my family and that makes me happy! They are very easy to make, the longest time you will have is waiting for them to be chilled. You can cut them into individual squares or into little bites if you are having a party, either way I think you will absolutely love them! Also, we love strawberries, so we had a side of strawberries when we ate ours….so yummy!

Lemon Cheesecake Bars

Ingredients:

CRUST:

15 Honey Graham Crackers (crushed)

1/2 cup of Sugar

3/4 cup of Butter (melted)

FILLING:

1 cup of Cream Cheese

2 (14 ounce can) Sweetened Condensed Milk

1 1/4 cup of Lemon Juice

4 Egg Yolks

Instructions:

First you want to make your crust. Combine your crushed honey graham crackers, butter and sugar together. Take the crust and pat it down evenly in a 13×9 inch pan. Next you want to mix together your cream cheese, sweetened condensed milk and lemon juice. When the mixture is smooth add in your egg yolks and mix for about 1-2 minutes. Preheat your oven to 350˚. Pour your filling on top of the crust and place in the oven for about 20-30 minutes or until a toothpick inserted in the center comes out clean. Take out of the oven and let it cool. Once it is cooled, you will place in the refrigerator for about 3 hours. Once the lemon cheesecake bars are chilled, cut them into squares and ….Enjoy!! : )
