Grilled Tilapia Salad

Gorton’s Seafood sent me a nice package in the mail asking me to review their products! I was thrilled to be able to do this, because we have never tried any of their seafood. So, I set off to the store with my coupons to get a few of their items! I ended up getting the crispy battered fish fillets, crunchy breaded fish sticks and the signature grilled tilapia. On the way home I was thinking what recipe I could create to use with one of their products and I decided I wanted to make a salad with the grilled tilapia.

As I was unloading all of my groceries I turned the oven on real quick to pop in the fish fillets and fish sticks, I’m already loved Gorton’s Seafood right now for giving me a free quick dinner! After the groceries were unloaded, I made some vegetables real quick and popped the fish fillets and sticks out of the oven and served my family! My husband and I ate the fish fillets while my kids devoured the fish sticks! Instantly I knew I had found a new meal for us to have!

A couple of days later I set out to make the grilled tilapia salad for dinner. It was very easy to make and so delicious! I think the most time consuming part of the whole recipe was making the salad dressing, which I did while the tilapia was being cooked in the oven! I absolutely love Gorton’s Seafood products and I’m so thankful that I was able to review them because now I have added new meals that I can make for my family!

Grilled Tilapia Salad

Ingredients:

2 Gorton’s Signature Grilled Tilapia

1 package of Baby Spinach

2 whole Carrots (shredded)

2 Tbsp of Feta Cheese

2 Tbsp of Croutons

1 Tbsp Pine Nuts

The Late Farmer’s Honey Vinaigrette Salad Dressing:

1/3 cup of White Wine Vinegar

 3/4 cups of Pure Olive Oil

1 1/2 Tbsp of Honey Mustard

2 Tbsp of Honey

1 pinch of Garlic Salt

1 squeeze of Lemon

1 pinch of Pepper

Instructions:

Preheat your oven to 400˚, then place your grilled tilapia on a baking sheet. Once your oven is preheated place the tilapia in there for 20 minutes. Now you want to prepare your salad dressing. Add in all ingredients under The Late Farmer’s honey vinaigrette salad dressing in a medium bowl and mix thoroughly. Next place your spinach in a large bowl, then pour your salad dressing over the spinach and toss. Now your tilapia should be done, let it cool for a few minutes. You will want to slice your grilled tilapia up to place on top of your salad mixture. Then add your croutons, feta cheese, carrots and pine nuts. Serve to your family for a wonderful meal….Enjoy!! : )
