Fall Buttercream Cupcakes

Fall time is here and it always reminds me of this buttercream cake my mom used to make for me. I have been trying my whole adult life to recreate it, but I can never get it the same as hers. This recipe is a similar version of the one she used to make for me, it is a delicious recipe. I will continue on my quest to tweak this recipe until I find that perfect taste. Until then I will use this one and wonder to myself could it be possible that the reason I can’t recreate it is because of my mother’s cooking technique?

Fall Buttercream Cupcakes

Cake Ingredients:

3/4 cup of Butter (room temp)

1/2 cup of Milk

1/4 cup of Heavy Cream

6 Egg Whites

1 tsp of Vanilla Extract

1 tsp of Salt

2 cups of Flour

2 cups of Pure Cane Sugar

3 tsp of Baking Powder

Instructions:

Preheat your oven to 350˚. In your mixer combine the butter, milk, heavy cream, egg whites, vanilla extract and salt. Mix these ingredients together well. Next you want to pour in half of your flour, sugar and all of your baking powder. After they are mixed thoroughly you want to add in your remaining flour and sugar. Mix well. Once your mixture is ready you want to spoon it into your cupcake baking cups. Then pop them into the oven for approximately 14 minutes for mini cupcakes and 17 minutes for regular sized cupcakes.

Icing Ingredients:

1/2 cup of Shortening

1/2 cup of Butter (room temp)

1 1/2 tsp of Vanilla Extract

4 1/2 cups of Powdered Sugar

4 Tbsp of Milk

Instructions:

Add your shortening, butter and vanilla extract to your mixer and mix well. You want to add in your milk next with about 1/2 cup of your powdered sugar. Keep mixing all the ingredients together and adding your powdered sugar 1/2 cup at a time. You will keep doing this until all of your powdered sugar is in the mixing bowl. Continue to mix the ingredients together until you get right consistency for your icing. After you are done, you are ready to frost your cupcakes. Then you can top off your cupcakes with some sprinkles if you want. I ended up mixing together about 2 Tbsp of sugar and some food coloring to get the orange sprinkles you see on top of my cupcakes! Enjoy!! : )
