Eggs, Eggs, Eggs

And more Eggs!! Hey, did someone say eggs?  You know how you can tell that Spring has arrived?  Well, if you have chickens then you know!  My chickens are laying like crazy right now!  You see when Summer comes around they slow down their egg production a little bit because of the heat.  Then in the Fall they slow down a little bit more and by time Spring comes back around you are like WOW I have forgotten how many eggs they can produce!

We have chickens for several reasons, but one of them is because of the amount of eggs we eat.  I would have to say we use between 24-36 eggs per week!  If you haven’t ever had a farm fresh egg then you are really missing out.  You should go to your local farmer’s market ASAP or contact me to get the best eggs you could ever have!  Not only are they healthier for you than the store bought ones, but their taste is incredible!  So, before I say goodbye to go eat some of my amazing farm fresh eggs, I want to leave you with some information about how much better the farm fresh eggs are for you!


According to Mother Earth News egg testing project, farm fresh eggs vs commercial eggs, the following was found that farm fresh eggs contain:

• 1/3 less cholesterol
• 1/4 less saturated fat
• 2/3 more vitamin A
• 2 times more omega-3 fatty acids
• 3 times more vitamin E
• 7 times more beta carotene
