Bacon Green Beans

I have to tell you I’m not a big fan of green beans, but I am really loving this recipe! I think what makes it so great is the extra flavor you get when you bite into one of the pine nuts or crumbled pieces of bacon. Overall, it was a big hit with my family for Thanksgiving, even the kids ate it! It takes longer to make and I would not call it an easy recipe, but it is definitely worth it if you do decide to make it!

Bacon Green Beans

Ingredients:

2 lbs of Fresh Green Beans

1/2 of Lemon (squeezed)

8 strips of Cooked Bacon (crumbled)

1/4 cup of Pine Nuts

5 Tbsp of Butter

2 small Garlic Cloves (diced)

1/2 tsp of Salt

Instructions:

Bring a large pot of water to a boil, clean and cut the tips off of your green beans while the water is heating up. Add in your salt to your water before it starts to boil. Once the water is rolling you will add in your green beans. Stir them around a little, while the water is still boiling. You will leave them in there for about 10 minutes. Once they are done, drain the water and let the green beans sit in the colander, do not rinse them with cold or hot water. In a small skillet take 1 Tbsp of butter and melt it in the bottom. Then add in your pine nuts and toast them over medium heat for about 1-2 minutes. Remove them from the skillet once they are done. Now in a large pot you will melt the remaining butter, add in the garlic cloves, lemon, pine nuts and bacon. You want to mix all of these ingredients well. Then you will add in large spoonfuls of the green beans to the mixture, making sure you coat the beans well. Repeat this process until all the green beans are mixed into your bacon, pine nut mixture and then….Enjoy!! : )
