Apple Jelly Pokey

I have to tell you, this recipe didn’t come out like I wanted it too. However, the recipe is an amazing one that I will make again, just not what I was aiming for. I wanted to make jelly filled donuts, but since it didn’t turn out tasting like a donut, I had to find a fitting name for it. Once again my husband helped me name it, so I give you the Apple Jelly Pokey. This is a simple and delicious recipe that is sweet, but not too sweet. I suggest having it as a breakfast treat for some of your houseguests over the holidays!

Apple Jelly Pokey

Ingredients:

2 1/2 cups of Flour

1 stick of Butter

3 Eggs

3/4 cup of Milk

3/4 cup of Sugar

2 tsp of Baking Powder

1 tsp of Baking Soda

1/2 tsp of Vanilla Extract

1/2 tsp of Salt

3 Tbsp of Powdered Sugar

1 cup of Apple Jelly

Instructions:

Mix all ingredients together in your mixing bowl on low speed, except for the powdered sugar and jelly. Once all ingredients are mixed together thoroughly, you want to transfer the mixture into a medium bowl. Cover the bowl and let the dough slowly rise for about 1 hour. Preheat your oven to 350˚. Then start making your dough into medium sized balls and place on a greased cookie sheet about 1 1/2 inches apart. Once they are all made, pop them in the oven for 10-12 minutes, you don’t want them too brown, just golden. Then take them out of the oven and let them cool down. You want to place your apple jelly in a bowl and heat it for about 30 seconds. Next take a straw and poke a hole in the side of the pokey, hence the name, all the way through, but stop right before you poke a hole in the other side. Repeat this process with each pokey. Stir your apple jelly and then transfer it into a decorating bag, then pipe the jelly into the holes of the pokey, I used Wilton tip #5. Once the pokies are filled you will dust the powdered sugar over the tops of them and then….Enjoy!! : )
