As you all know by now the Blogger Recipe Challenge group I’m in was sponsored by Wholly Guacamole this month, so I really wanted to come up with a creative recipe to use with their delicious guacamole they sent me! I know you can add salsa and guacamole to your beef fajitas, but wonder if you cooked the guacamole and then added it to your tortilla? This is exactly what I did and let me tell you it turned out great! The Wholly Guacamole Spicy Dip was absolutely perfect for this recipe because it added that extra flavor I was looking for! You will just have to try it for yourself and see!

Beef Fajita Wholly Guacamole Melt


2 lbs of Skirt Steak

1 Bottle of Marinade

1 – 8 ounce of Wholly Guacamole Spicy Dip

2 cups of Mexican Four Cheese

2 Tbsp Olive Oil



Take your skirt steak and place it in a medium size bowl and pour the bottle of marinade on top of it. Cover the bowl up and put in the refrigerator for 2-3 hours to let it marinate! Once your skirt steak is ready, you want to add your olive oil to a skillet. Then cook the skirt steak over medium heat for about 7 minutes until done. You want to preheat your oven to 350˚ now.  After you let your meat cool a little, you want to spread it out in a baking pan. Then take your guacamole and spread evenly on top of the fajita meat. Next top off the guacamole mixture with your cheese. Now pop in the oven for about 15 minutes to let the cheese melt. When the cheese is melted take out your beef fajita guacamole melt and…. Enjoy!! : )
