When creating a recipe for our monthly theme, I really put a lot of thought into it. I rack my brain and try to bring you guys some yummy recipes! Well, since our theme for this month is Holiday Recipes, I knew right away I wanted to do a peppermint recipe! Peppermint is the first thing I think of when I think of the holidays, so I decided to create…Peppermint Meringue Drops! This is a very easy to make recipe and the drops are absolutely fabulous! I’m planning on making them for a couple of holiday parties that I will be going to this holiday season! I hope you enjoy them! Peppermint Meringue Drops

Ingredients:

5 Egg Whites

1/4 Tbsp of Vanilla Extract

1/4 tsp of Salt

3/4 tsp of Cream of Tartar

1 1/4 cup of Sugar

3 Tbsp of Crushed Peppermint

Instructions:

In a mixing bowl you want to combine all of your ingredients except for the sugar and peppermint. Then you want to beat the ingredients together for about 3 minutes. Put your mixer on a slow setting and slowly add in all of your sugar. Once all the sugar has been added, add in your crushed peppermint. Now you want to make sure you beat this mixture on high until all sugar has been dissolved, about 7-10 minutes. You will see the mixture turn from egg whites to a smooth consistency. Preheat your oven to 200˚. Next take your mixture and place it into an icing bag to pipe the meringue drops. I used Wilton tip 2D to pipe mine out onto a parchment lined baking sheet. After you get 2 baking sheets ready you want to put one on the top rack and the other on the bottom rack. You will cook these drops for about 1 1/2 hours. When they are cooking you want to alternate the baking sheets from top to bottom rack about every 20-30 minutes. Once the meringue drops are ready, take them out, let them cool and….Enjoy!! : )
